- 3 sweet potatoes, cut crosswise into ¾-inch thick slices
- Juice of one orange
- 1 tbs. tamari
- ½ tsp. fresh grated ginger root
Slice sweet potatoes and place in a single layer in a steamer basket. Steam over simmering water for 10 to 15 minutes, until just tender. Mix the orange juice, tamari and ginger root together in a small bowl. Drizzle sauce over the steamed sweet potato slices and serve hot, at room temperature, or chilled.
