Coconut-Water Kefir

Kefir is often made with various kinds of dairy or nondairy milks, but it can also be easily made from water or coconut water. (This recipe is adapted from, which is also a good source of kefir grains.)

Coconut Water Kefir


  • 1 quart coconut water
  • 3 tbs. live kefir grains
  • 1 tbs. organic sugar

Optional flavorings: one diced apple and a cinnamon stick, or ½ cup berries or diced melon

Special equipment:

  • 1½-quart carafe
  • 6-x-6-inch square of cheesecloth
  • Rubber band

Place all the ingredients together in the carafe, cover with the cheesecloth, and secure with the rubber band. Set in a draft-free area, such as a cupboard or closet, for 24 to 48 hours for the culture to develop, tasting for desired sweetness level.
