The folks at Pacific Foods are sticklers for detail. All their humanely raised dairy and meat products come from the same two Oregon farms. All their vegetables are fair trade and organic. And when you taste the soup — where the results of all that care really come through — you’ll have a hard time going back to anything dried or canned. We’re big fans of the roasted red pepper and tomato soup (made with ripe tomatoes, roasted garlic and organic milk) as a base for a quick “homemade” veggie stew (just add a handful of dark leafy greens, a sliced zucchini or whatever you have on hand). The 16-ounce package also makes an ideal toss-it-in-the-bag lunch or snack. About $2.50 at your local natural grocery.
