How to Make Your Own Nut Milk

Whether you’re lactose intolerant, vegan, or simply looking to make more of your food and drink from scratch, creating your own nut milk gives you an easy alternative to the store-bought stuff — without all the industrial sugars, stabilizers, and other additives. Experiment with adding natural spices or flavorings, or simply enjoy plain. Most nut milks store in the fridge for a few days. Just shake them before using.

Whip up this dairy-free alternative with this simple whole-foods recipe.

  1. Measure 1 cup of your favorite raw nut — almond, cashew, pecan, or pistachio — and place in a glass bowl.
  2. Add enough water to cover — about 3 cups — and soak for 12 hours.
  3. Drain the liquid through a strainer and add soaked nuts to any household blender.
  4. Add 3 to 4 cups of water to the blender along with any flavor-enhancing ingredients, if desired. Blend on high speed until consistency is smooth (about one to two minutes).
  5. Pour liquid through a strainer or cheesecloth, and enjoy in your favorite dish or as a beverage.
