Meatballs

This recipe makes a large batch that can feed the whole family for days. Enjoy on a bed of whole-wheat pasta, zucchini noodles, or spaghetti squash.

Ingredients

  • 1 cup rolled oats
  • 2 lbs. lean ground turkey
  • 2 large eggs
  • 1/2 cup yellow onion, finely diced
  • 2 tbs. fresh basil, chopped
  • 2 tbs. fresh parsley, chopped
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 4 garlic cloves, minced

Directions

STEP 1
Add the rolled oats to a blender or food processor and blend into a flour.
STEP 2
Combine all ingredients together and mix well.
STEP 3
Roll into meatballs, pressing the mixture together firmly to prevent them from falling apart.
STEP 4
Over medium-high heat in a lightly oiled pan, cook the meatballs until the sides are browned.
STEP 5
Add the meatballs to a slow cooker and cover with your choice of pasta sauce. Cook on high for four hours.
