Ingredients
- 2 crisp, tart, eating apples (like Honeycrisp), cored and diced
- 2 stalks celery, diced
- 1 1/2 cups parsley, coarsely chopped
- 2 cups cooked quinoa, cooled to room temperature
- 1 cup toasted walnuts
- 1 lemon, zested and juiced
- 2 tbs. walnut oil
- 1/4 cup olive oil
- Dash of cayenne, optional
- Salt and pepper
Directions
- Thoroughly toss all ingredients together in a salad bowl. Adjust seasonings to taste.
